Today we wanted to share a recipe for instant pot red beans and rice. It is another great recipe to have in our recipe arsenal of quick weeknight meals.
Luckily, the instant pot made this meal so much easier and quicker to make. Not to mention how much healthier this recipe is compared to its boxed counterparts.
This recipe uses dried beans that don’t require presoaking thanks to the instant pot. Basically you’re sautéing up your sausage and vegetables and then adding your dried beans, water and spices to pressure cook together. It is so easy and is another great recipe to have in our supply of quick healthy meals so we aren’t tempted to eat something less healthy or get take out.
This recipe can easily be modified to meet any dietary restrictions. We use brown long grain rice but you can use any rice you prefer. We also use nitrate-free kielbasa sausage but obviously you can substitute any kielbasa or sausage you prefer.
Instant Pot Red Beans and Rice
A southern staple that is easy, delicious and healthy to make with your instant pot.
Ingredients
- 1 lb kielbasa sausage
- 1 onion, diced
- 1 bell pepper, diced
- 1 tbsp avocado oil (or cooking oil of your choice)
- 4 cups dry kidney or red beans
- 6 cups water
- 2 tsp creole or cajun seasoning
- 2 tsp garlic, minced
- rice of your choice, prepared
- bread of your choice, if desired
Instructions

Cook rice in rice cooker or stove top according to directions.

Wash red beans. Set aside.

Add tablespoon of avocado or cooking oil of your choice. Saute kielbasa sausage until sausage is browned to your liking.

Add bell pepper and onion and saute until onions are softened.

Add red beans, water, and spices to instant pot.

Put instant pot on manual for 35 minutes and then let it naturally release pressure.

Serve bean mixture over rice. Pair with fresh bread on the side.
Another great tip is to always have a pot of rice, potatoes, sweet potatoes, or pasta prepared. We try to always have a starch like this prepared each week. Then we can quickly throw together a meal pairing it with another main dish and vegetable. This also just helps so you can throw together an easy, delicious and healthy meal within minutes.
This red beans recipe is absolutely perfect and tastes like it took all day to cook. Serve these red beans over your favorite rice and bread for comfort food at its finest.
