Key Lime Pie

All about Key Lime Pie

Key Lime Pie is easy to make and everyone will rave about how amazing it is!  It has a great homemade crust and a flavorful key lime filling with a key lime punch.  The homemade whip cream balances the sour lime flavor and savory graham cracker crust. 

This is the perfect dessert to make for your summer gathering, BBQ, or potluck.  It isn’t too sweet or too heavy but makes the best treat on those warm summer days. 

This amazing pie starts with a homemade graham cracker crust.  Please make a homemade crust, it makes the pie!  It’s so easy to make this pie crust, all you need are graham cracker crumbs, melted butter, sugar.  Simply bake the crust for about 8-10 minutes and once it cools start on the filling. 

We highly recommend using fresh key lime juice for this recipe.  If you can’t find fresh key limes, you can use regular limes.  The biggest difference between key limes and regular limes is the size.  Key limes are much smaller as they are about 1.5 inches or so in diameter.  The flavor of limes and key limes are similar, but key limes are a little bolder as far as acidity and the juice has some floral notes.

Ingredients

Homemade Graham Cracker Crust

  • 1 1/2 cups graham cracker crumbs about 11 full sheet graham crackers
  • 3 tbsp sugar
  • 1/8 tsp salt
  • 1/2 cup unsalted butter melted

Key Lime Filling

  • 4 large egg yolks
  • 1 can sweetened condensed milk 14 ounce can
  • 1/2 cup fresh key lime juice
  • zest of key limes

Whipped Cream

  • 1 cup heavy whipping cream COLD
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

Homemade Graham Cracker Crust

  1. In a mixing bowl, combine the graham cracker crumbs, sugar, salt, and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish.

  2. Bake the crust in a preheated oven for 8-10 minutes or until lightly golden. Remove and let cool.

Key Lime Filling

  1. In another bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, and lime zest until fully combined.

  2. Pour the lime mixture into the cooled graham cracker crust and spread evenly.

  3. Return the pie to the oven and bake for an additional 10-15 minutes until set. Remove from the oven and let cool to room temperature.

Whipped Cream

  1. Add the whipping cream, powdered sugar, vanilla extract and beat ingredients together on low speed and increasing to high speed slowly as it begins to firm up.

  2. Beat for 60-90 seconds until stiff peaks form.

  3. Add dollops to your pie slices before serving.

Refrigerate the pie for at least 3 hours or overnight for the best flavor.  Store leftover pie in the refrigerator and enjoy within 3 days.
