Key Lime Pie

This Key Lime Pie has a luscious, flavorful key lime filling, simple graham cracker crust, and takes only 15 minutes to prep!

Ingredients

Homemade Graham Cracker Crust

  • 1 1/2 cups graham cracker crumbs about 11 full sheet graham crackers
  • 3 tbsp sugar
  • 1/8 tsp salt
  • 1/2 cup unsalted butter melted

Key Lime Filling

  • 4 large egg yolks
  • 1 can sweetened condensed milk 14 ounce can
  • 1/2 cup fresh key lime juice
  • zest of key limes

Whipped Cream

  • 1 cup heavy whipping cream COLD
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

Homemade Graham Cracker Crust

  1. In a mixing bowl, combine the graham cracker crumbs, sugar, salt, and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish.

  2. Bake the crust in a preheated oven for 8-10 minutes or until lightly golden. Remove and let cool.

Key Lime Filling

  1. In another bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, and lime zest until fully combined.

  2. Pour the lime mixture into the cooled graham cracker crust and spread evenly.

  3. Return the pie to the oven and bake for an additional 10-15 minutes until set. Remove from the oven and let cool to room temperature.

Whipped Cream

  1. Add the whipping cream, powdered sugar, vanilla extract and beat ingredients together on low speed and increasing to high speed slowly as it begins to firm up.

  2. Beat for 60-90 seconds until stiff peaks form.

  3. Add dollops to your pie slices before serving.
