We found it to be the most helpful to make the rice in the Instant Pot. You add all your ingredients, push a button and it makes the best rice so easily. This frees up your time and hands to make another dish or the main dish for your meal. This way you don’t have to stand over the stove and babysit your rice.
There are fancier recipes that require more ingredients. Many recipes call for tomato sauce or chicken broth. Not everyone has those ingredients on hand but usually most have some rice and tomato bullion in the pantry. You only need 3 ingredients for this recipe and that includes the water.

Instant Pot Mexican Rice

Ingredients
- 2 cups long grain white rice
- 2 1/4 cups water
- 2 heaping tablespoons tomato bullion
Instructions

Rince the rice until the water runs clear. Drain well.

Add rice, water, and tomato bullion to the Instant Pot.

Secure lid and turn valve to sealed position.

Use the rice button or cook on manual for 10 minutes.

When timer beeps, allow pressure to naturally release for 10 minutes.

Remove lid and gently fluff the rice with a fork.
Recipe Notes
Tomato bouillon cubes or granule can be found in the Mexican food section at your local grocery store.
How to Store and Reheat
After cooking rice, let cool and store in an airtight container. Store in the refrigerator for up to three days. This rice makes great leftovers!
To reheat, sprinkle with a small amount of water, cover with a damp paper towel and microwave just until heated through. When microwaving, fluff often to avoid overheating. You can also reheat on the stovetop over low heat. Use a covered pot and sprinkle in water to keep the rice moist.
