Today we’re sharing a recipe for Soft Lemon Cookies.  These cookies are so soft, lemony, and delicious, they melt-in-your-mouth.  Everyone loves all the lemon things and these cookies too!

All about Soft Lemon Cookies

These tart and tangy Soft Lemon Cookies are so tasty.  They will definitely satisfy your craving for a lemon treat.  They have a buttery lemon flavor which makes them hard to resist.  They are also soft and tender, which makes them even better.  We like to dust them with powdered sugar for a bit of extra sweetness!

These cookies are easy to make.  You just need a few important ingredients such as butter, sugar, salt, eggs, fresh lemon juice, lemon zest, lemon extract, all-purpose flour, baking soda and baking powder.  You simply bring your butter and eggs to room temperature, mix up your cookie dough batter, and chill the batter before baking.  Chilling the cookie dough is important as if your cookie dough is too warm, your cookies with start to spread too much when baking.    

This is definitely a recipe worth trying.  If you love all the lemon things, you will love these cookies too.  Make sure that you follow the recipe and that you have fresh lemons for the lemon juice and zest.  This makes a big difference in the overall lemon flavor.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs room temperature
  • 2 tbsp lemon juice
  • 2 tsp lemon zest grated
  • 1 tsp lemon extract
  • powdered sugar for dusting

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.

  2. In a large bowl or stand mixer, beat the butter and sugar until light and fluffy. Add the eggs one at a time and beat until combined.

  3. Add the lemon juice, lemon zest and lemon extract, and beat until combined.

  4. Gradually add the dry ingredients to the wet ingredients and beat until combined.

  5. Shape the dough into cookie dough balls and refrigerate for at least one hour.

  6. When you're ready to bake. Preheat your oven to 375 degrees F. Line baking sheets with parchment paper and arrange your cookie dough balls on the sheet.

  7. Bakes for 10-12 minutes or until the edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

  8. Dust with powdered sugar and enjoy!

How long will these cookies last?

These cookies will keep for several days at room temperature as you would store your cookies in a cookie jar or container.  We’ve found that they are best up to 4 days and after that they start to get dried out and crumbly.  They never last that long at our house as they either get eaten or are given away to friends or family.
