These tart and tangy Soft Lemon Cookies are the best lemon cookies!
In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
In a large bowl or stand mixer, beat the butter and sugar until light and fluffy. Add the eggs one at a time and beat until combined.
Add the lemon juice, lemon zest and lemon extract, and beat until combined.
Gradually add the dry ingredients to the wet ingredients and beat until combined.
Shape the dough into cookie dough balls and refrigerate for at least one hour.
When you're ready to bake. Preheat your oven to 375 degrees F. Line baking sheets with parchment paper and arrange your cookie dough balls on the sheet.
Bakes for 10-12 minutes or until the edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Dust with powdered sugar and enjoy!
