Peanut Butter Granola

Today we’re sharing a recipe for Peanut Butter Granola.  This is hands down one of our favorite breakfast foods.  If you love peanut butter and granola than you are sure to love this granola as much as we do too. 

All about Peanut Butter Granola

This granola is quick and easy to make.  We typically make a couple batches of granola every week for a quick and healthy breakfast.  It’s a great way to get oatmeal in your diet without having to have a hot bowl of oatmeal.  It’s heating up here in Texas and the last thing you want to eat for breakfast is a hot bowl of oatmeal.

If you grew up loving peanut butter cereals like peanut butter captain crunch but can’t bring yourself to eat these cereals as an adult then this the granola for you.  It is definitely the adult version of peanut butter cereal but is a quite a bit healthier too.  We love the clusters of peanut butter and oats that this granola makes.  We typically have a small bowl with a little milk and eat it as a cereal.  You could also eat it over yogurt or by itself.  It’s just so delicious!!   

One thing we love about this granola is that it is a make ahead breakfast option.  We love being able to make breakfast foods especially that we can quickly eat and get our day started in the morning.  And because of the ingredients, this granola stays with you and keeps you full until lunch time.   

Peanut Butter Granola

The best ever peanut butter granola!

Ingredients

  • 2/3 cup peanut butter
  • 6 tbsp honey
  • 2 1/4 cup rolled oats
  • 1 cup rice crispy cereal
  • 1 cup honey roasted peanuts
  • 1-2 tbsp coconut or other oil if needed

Instructions

  1. Heat your oven to 325 degrees F. Line a cookie sheet with parchment paper.

  2. In a microwave safe bowl, warm the peanut butter and honey. If this mixture is too dry, add a couple tablespoons of coconut oil or oil of your choice.

  3. Then mix in your rolled oats, rice crispy cereal, and peanuts. This mixture will be thick but just try to make sure that it is well mixed.

  4. Pour and spread the granola mixture and press it down so that it even across the cookie sheet.

  5. Bake for 18 minutes. Then check your granola and if it seems like it needs to bake a couple more minutes place back in the oven. Bake for no more than 2 more minutes and be sure that it doesn't burn.

How long well this granola keep?

This peanut butter granola stores well at room temperature in an airtight container for a week or even two weeks.  It never lasts that long in our house but it will definitely keep well.  If you don’t believe you eat it up in time or have concerns about it not keeping, make smaller batches.
