Glazed Apple Cinnamon Oatmeal Bread

Today we’re sharing a recipe for Glazed Apple Cinnamon Oatmeal Bread.  This quick bread is the perfect bread to made for breakfast, brunch, snack or even a healthy dessert.  It is a simple and delicious recipe with ingredients that you most likely already have in your pantry. 

All about Glazed Apple Cinnamon Oatmeal Bread

This bread is so good!  It is so moist because of the applesauce in the batter and then the glaze that you make to pour on top of the bread at the end.  It is not overly sweet like some quick breads and is healthy too with the addition of oats, Greek yogurt and applesauce.  You could even swap a free more ingredients to make the recipe even healthier and it will still taste amazing. 

This is a really easy recipe and only takes about 10 minutes or less to mix all the ingredients together and pour into your bread pans.  Then once the bread comes out of the oven you simply mix together a little applesauce with some powdered sugar for the glaze.  This recipe makes two regular size bread loaves or four mini bread loaves.  You bake about the same time but just a little bit longer for the regular bread loaves.

Ingredients

  • 1 3/4 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1 cup sugar
  • 3/4 cup vegetable, canola, or avocado oil
  • 2 eggs, beaten
  • 1/2 cup plain nonfat Greek yogurt
  • 1 cup applesauce
  • 1 tsp vanilla

Glaze:

  • 2/3 cup powdered sugar
  • 1/4 cup applesauce

Instructions

  1. Preheat the oven to 350 degrees and grease your loaf pans.

  2. In a large bowl, add flour, oats, salt, cinnamon, and baking powder and stir to combine. Set aside.

  3. In another bowl, whisk together the sugar, oil, eggs, yogurt, applesauce and vanilla. Fold the dry ingredients into the wet ingredients by hand until just combined.

  4. Divide the batter between your loaf bans and bake for 40-45 minutes (test doneness with a toothpick – it should come out a little moist, but mostly clean).

  5. Remove from the oven and keep in your pans for 5 minutes. Meanwhile, whisk together the powdered sugar and applesauce in a small bowl. Then move your bread loaves to a rack with something underneath to catch the extra glaze. Then pour this glaze over your bread loaves.

How long will this bread keep?

This bread will stay fresh covered at room temperature for a couple of days but we typically store it in the refrigerator because with the glaze and it being so moist it can go bad more quickly than other quick breads at the room temperature.  You can just cut a piece at a time and reheat it just a bit prior to eating.
