All about Patriotic Fruit Pizza

If you’re in need of an easy dessert to take to a potluck or BBQ, do yourself a favor and make this today.  You will love it; the kids will love it and any guests will love it too.  If you’re in a hurry, you can use store bought sugar cookie dough.  But this homemade sugar cookie dough is quick and easy to make too.  Not only is the cookie dough easy, but the topping you make for frosting is easy too.  And washing up some blueberries and strawberries is easy enough too.

Can you make this pizza with different fruits?

If you wanted to make this fruit pizza for other holidays or different times of the year you could use different fruit as well. Many other fruits like mango, kiwi, and even raspberries would bring more color to this fruit pizza.  If you wanted to serve just fruit with fruit dip and forget the cookie crust, you can do that too!  But everything about this fruit pizza, the topping, and the fruit are simply amazing.

Ingredients

  • 1 favorite sugar cookie recipe homemade or store bought
  • 1 8-oz package cream cheese, softened
  • 1 7-oz jar marshmallow creme
  • Blueberries rinsed and completely dry
  • Strawberries rinsed and completely dry

Instructions

  1. Preheat your oven to 350 degrees.

  2. Prepare your sugar cookie dough. If making homemade cookie dough, please the recipe below.

  3. Press the sugar cookie dough on a parchment lined baking sheet or jelly roll pan. Let the parchment paper overhang by a few inches on both of the long sides of the pan (this allows lifting the pizza out of the pan easier).

  4. Bake your pressed sugar cookie crust in the oven for 11-12 minutes. Allow your cookie crust to completely cool.

  5. To make your fruit dip or fruit frosting, whip your softened cream cheese with the jar of marshmallow creme. Once it is combined well, spread the fruit dip on top of the cooled sugar cookie crust.

  6. Next you will slice your strawberries. You then arrange your blueberries in the upper top left corner to represent the US flag. I made 5 rows of 6 blueberries (not correct for the number of stars on the flag but to look uniform), placing them close together but leaving space for the white to show through.

  7. To make the red stripes of the flag with your strawberries, start at the very top and make between 3-4 rows of sliced strawberries, all facing the same direction, to make uniform rows. Make sure to leave some white space between each row to represent the US flag.

  8. Once the flag is assembled, cover with plastic wrap and refrigerate until serving (especially on a hot day!). Cut into serving pieces with a sharp kitchen knife or pizza cutter.

For homemade sugar cookie dough, please see our recipe.

This fruit pizza will keep if stored in the refrigerator for a couple of days or up to a week.  It never lasts that long in our home but if you can, it stores better if you move leftovers to an airtight container in the refrigerator.
