Instant Pot Spanish Rice

Today we’re sharing a recipe for Instant Pot Spanish Rice.  This quick and easy homemade rice is the perfect complement to any Mexican meal. 

Do you have an Instant Pot yet?

We were initially a little intimidated because of the whole “pressure cooker” thing but the instant pot is simple to use and has a number of different safety features making it a great kitchen appliance.  You can’t even take the lid off until the pressure is completely released. 

The instant pot is so versatile in the types of food you can prepare and how it cooks food in a fraction of the time compared to the traditional method.  Not only does the food come out just as good but in many instances it turns out better in the instant pot. 

Does Instant Pot Spanish Rice turn out that much better?

While the instant pot makes incredible brown rice, we thought why couldn’t we make Spanish rice.  We decided to make this rice to complement our meal of fajitas and it turned out incredible.  This is a must try recipe if you needing a Spanish rice side.

Even if you don’t have an instant pot you can prepare this same recipe on the stove top.  But please do get one or ask for one for an upcoming holiday gift because it is truly a lifesaver.

Instant Pot Spanish Rice

This quick and easy Instant Pot Spanish Rice is the perfect complement to any Mexican meal.

Ingredients

  • 1 tbsp avocado oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups uncooked brown rice (or white rice)
  • 14 or 14 1/2 ounces canned Rotel diced tomatoes and green chilies
  • 1 tsp tomato bouillon
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp black pepper
  • 2 1/4 cups water (or vegetable broth)
  • additional salt to taste

Instructions

  1. Properly rinse and drain your rice.

  2. Using the Saute function on the Instant Pot, saute onion, garlic, and rice in the avocado oil for 1-2 minutes, until fragrant.

  3. Add the Rotel, bouillon, cumin, chili powder, black pepper and water or vegetable broth. Stir together. Now, seal Instant Pot and cook on high pressure for 24 minutes. Once complete, allow the pressure to come down naturally.

  4. Fluff with fork and serve.

Recipe Notes

If you don’t have an Instant Pot, simply saute the onion, garlic, and rice in a large regular pot for 3-4 minutes.  Then add remaining ingredients, bring to a boil and simmer for 40 minutes.  

How long does Instant Pot Spanish Rice stay good?

Instant Pot Spanish Rice like any rice is best served after initially made. However, it also reheats extremely well. We typically eat it alongside other leftovers throughout the next several days or possibly up to a week. Whatever we don’t eat, we put in an airtight container or bag and freeze for a later use.
