Chicken Black Bean Quesadillas

Today we’re sharing a recipe for chicken black bean quesadillas.  This recipe is easy, healthy, and takes less than 10 minutes to make.

Do you have leftover chicken?  Do you have a rotisserie chicken?  Are you just looking for a recipe to use up some chicken? 

Well this is the recipe for you. Most likely, you have everything you will need to make this delicious quesadilla.  And you very well know that the quesadillas itself is yummy but adding these extra ingredients takes this quesadilla to a new level.  In this case we had some leftover rotisserie chicken meat that we needed to use up.  We added some canned black beans and cheese and this made an great quesadilla.

What if I don’t have any leftover chicken or black beans? 

There is no need to worry.  You can cook up one chicken breast or you can use some leftover meat such as ground or shredded beef, pork, turkey or a meat alternative.  You could also use canned chicken or meat if that is all you have available.  And if you don’t have black beans just use any canned or cooked beans you have on hand.    

What is the best way to cook a quesadilla?

Hands down the best way to cook a quesadilla is in a cast iron skillet.  You add some butter or oil to your pan and fry your quesadilla to give it the color and crisp that you love about a restaurant style quesadilla.  Cooking your quesadilla in the skillet just takes it to the next level.  Whatever you do, don’t make the quesadilla in the microwave.  If you are making quesadillas for the whole family, keep the made quesadilla in the oven to keep them warm as you continue to make the others.

What’s next?

Pair your quesadilla with your favorite condiments or sauces.  Add your salsa, guacamole, sour cream, and hot sauce to the quesadilla.  A quesadilla like this is really a complete main dish item.  You could add another side such as corn, rice, or fruit if you felt you needed something more than just the quesadilla.   

What else can you add to a quesadilla?

Use any type of cheese, vegetables, or beans you have on hand and need to use up.  If you had peppers, tomatoes or spinach you could add this to or as a garnishment to you quesadilla.  Just use the quesadilla as an opportunity to use up any ingredients that need to used up before they go bad.  This is a great recipe to help reduce your food waste.
