Fresh Milled Flour Pizza Rolls: A New Family Favorite
Fresh milled flour pizza rolls filled with pepperoni, sausage, and cheese make an easy family meal. Soft, flavorful, and perfect for dipping in pizza sauce or ranch!
Ingredients
Dough:
- 1 3/4 cups warm water
- 2 1/4 tsp active dry yeast
- 1/4 cup brown sugar
- 1 egg
- 6 tbsp butter melted
- 1 tsp salt
- 5 to 5 1/2 cups freshly milled flour
- 1/2 tsp basil
- 1/2 tsp rosemary
Filling:
- 1 pint or can pizza sauce
- 2 cups shredded cheese
- pepperoni, sausage or your choice of meat or veggies
Instructions

Mix warm water, yeast, and brown sugar. Let sit 5 minutes until foamy.

Add egg, melted butter, salt, basil, rosemary, and flour.

Mix until shaggy.

Rest dough 10–15 minutes.

Knead about 5–7 minutes until smooth.

Cover and let rest 15 minutes on the counter.

Roll into a large rectangle.

Spread pizza sauce, leaving a 1/2-inch border.

Add cheese and pepperoni, sausage or other toppings.

Cut strips with a pizza cutter and roll up. Or roll into one log and cut pieces like you would for cinnamon rolls.

Place in a greased or lined pan.

Cover and rise 45–60 minutes.

Bake at 350°F for 22–26 minutes until golden brown.

A little extra melted butter brushed on top after baking makes these incredible with fresh milled flour.
Recipe Notes
- Let the dough rest for about 10–15 minutes before kneading so the flour can fully absorb the liquid (this helps tremendously with fresh milled dough).
- Fresh milled dough should feel slightly tacky, not dry.
- If the dough feels too sticky after resting, add flour 1 tbsp at a time.
- Hard white wheat gives a softer, lighter pizza roll. Hard red wheat gives a heartier flavor.
