Today we’re sharing a recipe for Bird’s Nest Cookies. These are a delicious, easy, no-bake treat with only 4 ingredients, for the whole family to enjoy.
All about Bird’s Nest Cookies
Bird’s Nest Cookies are also known as Butterscotch Haystacks and are a butterscotch and peanut butter no bake cookies. But they aren’t just any no bake cookies because you shape them into a little bird’s nest and decorate them with a few candy eggs. This makes them the perfect Easter or spring treat that is finger lickin’ good and kid-approved!
There’s just something about these cookies that stands the test of time. They’re nostalgic and loved by many. This is recipe that my mother made when I was a child. My mother always seemed to keep the cookie jar stocked with some delicious cookie or treat. These cookies were one of the treats she made for Easter.
With only 4 ingredients and no baking required, these are quick and easy to make. They are especially fun for kids to make! Some choose to make their cookies in a muffin tin and that is a good approach to keep the nests contained and they harden in nice form. However, I don’t do it that way because I prefer removing them from parchment paper. It’s just a lot easier to manage!
Bird’s Nest Cookies
These are a delicious, easy, no-bake treat with only 4 ingredients, for the whole family to enjoy.
Ingredients
- 3/4 cup Butterscotch Chips
- 1/2 cup Creamy Peanut Butter
- 2 cups Chow Mein Noodles
- Chocolate Easter Egg Candy
Instructions

Melt the butterscotch chips and peanut butter in a saucepan over low heat. Continually stir until melted.

In a separate bowl, combine the melted mixture with the Chow Mein noodles.

Scoop your desired amount into the shape of a nest on a parchment lined pan or in lined muffin tin. Top each nest with a few Chocolate Easter eggs.

Let cool completely.
Recipe Notes
You can substitute chocolate chips instead of butterscotch chips if you want or prefer the taste or look of chocolate instead. This will simply result in your bird’s nest being a little darker in color but will still be perfect!
How long will these cookies keep?
These Bird’s Nest Cookies will keep for several days in an airtight container at room temperature. Depending on the temperature and humidity in your home, they may get soft after this point. Just be sure to enjoy them and share them while they’re fresh.
