We’ve made them with semi-sweet chocolate chips, milk chocolate chips, and even white chocolate chips. You could even substitute raisins instead of chips if you were looking for a healthier option.

These are honestly our go-to recipe when we’re too lazy to make cookies but want a little treat.
Butterscotch Chip Oatmeal Bars
Delicious, melt in your mouth, butterscotch chip oatmeal bars
Ingredients
- 1 cup butter (softened)
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 tbsp milk
- 1 1/2 tsp vanilla
- 1 1/2 cups flour
- 1/2 tsp salt
- 4 1/2 cups quick cooking oats
- 1 tsp baking soda
- 1 cup butterscotch or chocolate chips
Instructions

Cream together butter and sugar.

Add eggs, milk and vanilla.

Add the remaining ingredients. Mix just until combined.

Press into a greased 9 x 13 baking dish.

Bake at 375 degrees for 12 – 16 minutes.
These oatmeal bars store well at room temperature for several days or up to a week. We store them in a baking dish and covered on the counter. You can even heat them in the microwave for 10-15 seconds if you want one to be warm and gooey again.
