Instant Pot Zuppa Toscana

Today we wanted to share a recipe for instant pot Zuppa Toscana.  This is another great recipe for a quick weeknight meal.

This a copycat recipe of a favorite soup served at the Olive Garden.  This yummy soup with Italian sausage, potatoes, greens, vegetables and creamy broth.  This is definitely comfort food and the instant pot makes it comfort food in a matter of no time.

Zuppa toscana is a broad based term literally meaning “Tuscan soup”. Classic zuppa toscana is a soup made with kale, zucchini, cannellini beans, potatoes, celery, carrots, onion, tomato pulp, extra virgin olive oil, salt, powdered chili, toasted Tuscan bread, and rigatino. You can make your own Zuppa toscana based on what you have in your pantry and the foods you like.

This recipe can be modified for any diet.  We make our own Italian sausage by adding spices to ground pork.  You can easily use any kind of meat and add the Italian spices to it.  You can make this a vegetarian friendly recipe by adding a meat substitute.

Instant Pot Zuppa Toscana

Easy and Delicious Zuppa Toscana Soup made in your Instant Pot

Ingredients

  • 1-2 tbsp olive oil
  • 1 lb mild italian sausage
  • 4 cloves garlic, minced
  • 6-8 red potatoes, unpeeled and sliced into 1/4-inch slices
  • 6 cups chicken broth
  • 2 cups fresh kale or spinach
  • 1 zucchini, diced
  • 3/4 cup heavy cream, half and half, or milk

Instructions

  1. Using the saute function of the instant pot, heat the olive oil.  Add onions and cook until they begin to become translucent. 

  2. Add the Italian sausage, crumbling up into smaller pieces and cooking until browned. 

  3. Add garlic and allow to cook just until fragrant, about a minute. 

  4. Drain off excess grease if desired and return meat to pot. 

  5. Add potato slices, zucchini, and chicken broth. 

  6. Lock the lid into place and set to sealed. 

  7. Cook at high pressure for 5 minutes using the manual setting. 

  8. When cooking is complete, allow a natural pressure release for 10 minutes, followed by a quick release. 

  9. When remaining pressure has released, remove the lid and add the kale or spinach to the pot.  The heat from the soup will wilt the greens as you stir. 

  10. Pour in cream, half and half, or milk, stirring to combine. 

What else about this soup

Pair this soup with a yummy bread or roll.  If you are trying to eat more healthy, you can pair this soup with a salad.  Either way, you won’t be disappointed. 

This instant pot Zuppa Toscana soup recipe is absolutely perfect and tastes like it’s been cooking all day.  And again adding to our supply of quick healthy meals. This way we aren’t tempted to eat something less healthy or get take out. 

You can make this soup by cooking it low and slow in a crock pot or on the stove.  Don’t let not having a pressure cooker stop you from trying this recipe for yourself.
