The Perfect Breakfast Burritos

There is a trick to cooking the absolute perfect breakfast burritos.  This trick is something so simple yet surprising.  It may require an extra step or two but is completely worth it so that you can master cooking the perfect breakfast burrito at home.  After all is there anything more perfect than all your favorite breakfast foods wrapped up in a warm flour tortilla?  We can’t really think of anything else that meets all of the food group requirements yet tastes so delicious.

The secret to cooking the perfect breakfast burritos is to COOK EVERYTHING SEPARATELY!  By cooking everything separately you will get the perfect crisp on the potatoes and sausage and that the eggs are dry.  This results in a breakfast burrito mixture that doesn’t have too much moisture.  The problem with there being too much moisture in the burrito mixture is that it makes for a soggy burrito.  It also means that instead of all of the ingredients standing up on their own, they just all blend together and the potatoes instead of being crispy become soggy.  This is something that we just can’t stand and this is the reason why we developed our own breakfast burrito recipe.

When we realized we were onto something, possibly a revelation in the breakfast realm, we knew we had to share this knowledge with others.  When we make our breakfast burritos we prefer to use a breakfast sausage such as jimmy dean instead of bacon.  We think it just tastes better but if you like bacon better than sausage than go ahead and use it instead.  We also use farm fresh eggs from our own backyard chickens.  We love knowing where our eggs are coming from and by feeding our chickens an organic and non-gmo feed, we know we are getting the best quality eggs.  We also slightly warm flour tortillas in a bag or towel for the perfect warming method that doesn’t dry out the tortilla.

The Perfect Breakfast Burritos

1 1lb package ground breakfast sausage or bacon
1 dozen eggs
6 to 8 medium sized potatoes
Ground pepper
Salsa
Shredded cheese
Flour tortillas

Directions:

Dice potatoes into small cubes. We typically have potatoes pre-diced and frozen that we use. This helps this recipe go much faster.

Beat the eggs in a medium sized mixing bowl. Add ground pepper to taste.

Preheat two cast iron skillets. We typically use two 12-inch skillets for this recipe.

Add a tablespoon of oil a tablespoon of butter to the first skillet. Add the diced potatoes to this skillet and fry them until cooked and slightly crispy.

A few minutes after you start cooking potatoes begin cooking your sausage or bacon. The potatoes take the longest to cook so it seems they get the perfect amount of cooking time this way.

Add a tablespoon of oil to your other skillet and add the ground sausage or bacon to this skillet. Cook your meat until thoroughly cooked and slightly crispy. Once cooked completely, remove from the skillet and place on a paper towel lined plate or bowl.

Cook your eggs in the same skillet where you cooked the sausage or bacon. Ensure there is enough oil, fat, or butter in your skillet and add your beaten egg mixture.

Once the eggs are cooked, your potatoes should be cooked through and slightly crispy. You will then add the sausage or bacon and scrambled eggs to the skillet with the potatoes.

Warm flour tortillas just until pliable. Add several large spoonfuls of breakfast burrito filling to the tortilla. Then add shredded cheese and salsa to taste.
