The perfect pancakes and waffles made from scratch

While the best part of waking up is some coffee in your cup.  You can make it the perfect breakfast with a pancake or waffle made from scratch.  With this easy and inexpensive recipe, you will never turn to store bought pancake or waffle mix again.  In fact, you most likely have all of the ingredients for this recipe on hand and could mix it up within less than 5 minutes.

We have developed what we believe to be the perfect recipe for pancakes or waffles made from scratch. These pancakes are the perfect thickness, and are both fluffy and buttery.  While the waffles have the perfect crispy outside and stand up well to any toppings that fill the nooks and crannies.  We always cook our pancakes in a cast iron skillet which if done correctly gives you the perfect crisp on the outside of the pancake while they are fluffy and tender inside. We have several tips and tricks to cooking the perfect pancake in a cast iron skillet which will be featured in an upcoming post. This recipe makes enough for 4 people and can be cut in half if you are only cooking for 2. Below you will find links for the cast iron skillet and whisk we used. Both of which we believe are essential cooking items.

The Perfect Pancake and Waffle Recipe

1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 tablespoon white sugar
3 tablespoons butter, melted
2 tablespoons oil
2 teaspoons vanilla
1 egg
1 ¼ cups milk

Directions:

Mix together flour, baking powder, salt, sugar and cinnamon in a large bowl.

Whisk in the melted butter, oil, vanilla, egg, and milk until combined. Let batter rest for a couple minutes. During this time the batter will thicken, if it becomes too thick add more water or milk until you reach your desired consistency.

Preheat a large skillet over medium-high heat. Add butter and oil to the pan. Pour ¼ cup of batter into the hot skillet for each pancake. Cook for 2 to 3 minutes, or until bubbles appear on the sides and center of each pancake. Flip and cook until golden brown, about 1 to 2 minutes on the opposite side.
