This copycat recipe for Subway Italian Herb & Cheese Sub Sandwich Roll is outstanding. You can have your own sub sandwich night for a fraction of the cost!
In the bowl of a stand mixer, whisk together the yeast and water. Then whisk in the sugar, oil, salt, egg, and the mashed potato flakes.
Add the flour and knead for 6 minutes on low speed. Rest the dough for 10 minutes.
Transfer the dough onto a floured surface and cut into 4 equal pieces. Gently pat and roll each into a 12-inch log.
Spray the tops with water. Dredge in the Italian Herb Blend.
Place the rolls onto the silicone sub roll mat and score the tops (3-4 slashes.)
Allow dough to rise until tripled in size (up to 1 hour if rising in a warm place.)
Sprinkle the tops with shredded cheese. We typically use a Colby and Monterey Jack cheese blend. Bake for 15-18 minutes at 375 F degree. Cool in the molds before removing.
This recipe makes 4 (10 oz) footlongs.
I used Silcone Sub Roll Mats that were purchased on Amazon.
