Cabbage Salsa

The best alternative to regular salsa with more crunch and tastes great with chips or in place of those greens.

Ingredients

  • 6 cups shredded cabbage (one small-medium head of cabbage)
  • 1 tomato, diced
  • 1-2 jalapeno peppers, finely diced
  • 1 small onion, finely diced
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp sugar
  • 1/4 cup lime or lemon juice
  • 1 tbsp oil
  • 1 red pepper, diced (optional)
  • 1 avocado, cubed (optional)
  • 1 cup cilantro leaves, diced (optional)

Instructions

  1. Chop or shred vegetables.  Then combine all vegetables.

  2. Prepare the remaining ingredients and add to the bowl. 

  3. Cover and refrigerate for at least a couple hours. 

  4. Serve alongside beans and salsa with chips or as the greens on your taco or burrito.
