All about Sourdough Discard Granola Bars
These granola bars are one of those perfect things to make for a healthier snack, treat, or breakfast choice. It’s a simple recipe that comes together quite easily. You need a couple pantry ingredients and some of your sourdough discard. We love how few ingredients it takes to make these bars and to know exactly what we’re eating.
This recipe uses peanut butter but feel free to use another nut butter if you can’t use peanut butter. Also, the recipe uses honey, but you can use another sweet syrup like maple syrup if you prefer. These granola bars are so delicious, and you can’t even tell there is sourdough discard in the recipe.

Like many on a Sourdough journey, you envision loaves upon loaves of delicious sourdough bread. But it turns out those sourdough loaves take a lot of time and practice to make. In order to keep your sourdough starter alive, you continually feed it and must find ways to use the starter or dump it. In the spirit of not wasting food, even sourdough discard isn’t something that we can afford to waste. This recipe uses up 1 cup of sourdough discard so it’s a great recipe to have on hand.
While our sourdough starter has made quite a few loaves of bread, tortillas, pizza, bagels, pancakes, waffles, brownies and even muffins. We are still looking for ways to use up sourdough starter and found these granola bars are another delicious option. We regularly make these for our family and it’s a favorite recipe by all!
Sourdough Discard Granola Bars
These granola bars are one of those perfect things to make for a healthier snack, treat, or breakfast choice!
Ingredients
- 1/4 cup butter, melted 57 grams
- 1/4 cup peanut butter 65 grams
- 1/2 cup honey 120 grams
- 1/2 cup sourdough discard 120 grams
- 1 tsp vanilla 5 grams
- 1/4 cup brown sugar 55 grams
- 4 cups rolled oats 360 grams
- 1/2 tsp salt 3 grams
- 1 cup mini chocolate chips 163 grams
Instructions

Preheat the oven to 325 F degrees.

Melt peanut butter and butter in the microwave for about 30 seconds. Mix in the honey, sourdough discard, and vanilla extract in a large bowl.

Then mix in the brown sugar, rolled oats, and salt. Fold in the chocolate chips.

Line a 8 x 8 pan or 9 x 13 inch pan with parchment paper. Dump the mixture into the pan. Press the mix firmly to create an even layer in the pan. Pressing the mixture into the pan is important for getting the bars to stay together.

Bake 9 x 13 pan for 20-25 minutes. Bake an 8 x 8 pan for 35-40 minutes or until the bars seem baked through and edges are golden brown.

After the bars have baked, let them cool completely before cutting.

Cut into equal bars. Wrap individually or store in an airtight container.

How long will these granola bars last?
These granola bars will keep for several days at room temperature in an airtight container or wrapped.
