These cookies are one of those recipes that have gone viral in the sourdough community.  They start with browned butter.  If you haven’t made a cookie recipe with browned butter, you are in for an absolute treat.  The browned butter gives the cookies another level of flavor that you can’t get any other way. 

Browning the butter takes the most time and patience in this recipe.  Once you’ve browned the butter, it is an easy cookie recipe that anyone can make.  The only other special ingredient is the sourdough discard and you can’t taste it and won’t believe how delicious it makes these cookies.

Like many on a Sourdough journey, you envision loaves upon loaves of delicious sourdough bread.  But it turns out those sourdough loaves take a lot of time and practice to make.  In order to keep your sourdough starter alive, you continually feed it and must find ways to use the starter or dump it.  In the spirit of not wasting food, even sourdough discard isn’t something that we can afford to waste.  This recipe uses up 1 cup of sourdough discard so it’s a great recipe to have on hand. 

While our sourdough starter has made quite a few loaves of bread, tortillas, pizza, bagels, pancakes, waffles, brownies and even muffins.  We are still looking for ways to use up sourdough starter and found these chocolate cookies are another delicious option.  We regularly make these for our family, friends, and customers.  It is a favorite recipe by all!

Sourdough Discard Chocolate Chip Cookies

Ingredients

  • 4 cups all-purpose flour
  • 2 tsp baking soda
  • 4 tsp cornstarch or arrowroot powder
  • 2 tsp salt
  • 3 sticks browned butter, cooled 1 1/2 cups
  • 2 cups brown sugar
  • 1/2 cup granulated sugar
  • 1 egg + 1 egg yolk
  • 1 tbsp vanilla extract
  • 1 cup sourdough discard
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 cups milk chocolate chips

Instructions

  1. Combine all dry ingredients in a bowl and set aside.

  2. In a stand mixer or large bowl, combined the cooled butter and sugars. Mix until combined.

  3. Add in egg and egg yolk, one at a time and stir until combined. Add in vanilla and sourdough discard and mix.

  4. Add in half of the dry ingredients then mix until just incorporated. Add remaining flour mixture. Do not overmix or you'll have tough cookies.

  5. If your mixture is too wet, add a tablespoon of flour at a time until it's a good texture. If it's too dry, add a little bit more melted butter.

  6. Mix in your chocolate chips.

  7. Cover with plastic and stick in the fridge for 15-30 minutes. Make 2 tablespoon balls and place on parchment lined baking sheet.

  8. Preheat oven to 350 degrees F and bake for 12-14 minutes. Don't over bake! Cool on rack.

Recipe Notes

These cookies make a huge batch.  The browned butter adds such an amazing nutty flavor.  Don’t skip it!

You can add in nuts, marshmallows, toffee chips or anything else you like!

How long will they keep?

These cookies will keep for several days at room temperature in an airtight container or wrapped.  You can also freeze these cookies for longer term storage.
