Today we’re sharing a recipe for Sourdough Bran Muffins. These muffins are our “go to” bran muffins! We’ve tried many different recipes, but these ones are the ones we enjoy the most!
All about Sourdough Bran Muffins
These muffins are the perfect thing to make for a quick breakfast or even for a treat! They are great to pack in a lunch box or to have for an after-school snack. These muffins are tasty and moist and have great flavor. They have an amazing muffin texture, and you can add just about any mix-ins that you love. We typically add raisins and nuts, but you can add any dried fruit, nuts or even chocolate chips if you would rather have that kind of muffin.
You don’t need very many ingredients to make these bran muffins. Like most muffins made from scratch, it’s simple and easy to make. You can use up bran flake cereal or ground bran. You can make this recipe your own by adding your choice of dried fruit and whether or not you would like to add nuts. If you choose not to add one mix-in, maybe just add a handful more of the other.

Like many on a Sourdough journey, you envision loaves upon loaves of delicious sourdough bread. But it turns out those sourdough loaves take a lot of time and practice to make. In order to keep your sourdough starter alive, you continually feed it and must find ways to use the starter or dump it. In the spirit of not wasting food, even sourdough discard isn’t something that we can afford to waste. This recipe uses up 1 cup of sourdough discard so it’s a great recipe to have on hand.
While our sourdough starter has made quite a few loaves of bread, tortillas, pizza, bagels, pancakes, waffles, brownies, and even cookies. We are still looking for ways to use up sourdough starter and found that these bran muffins are another delicious option. We regularly make these muffins for our family and friends. This recipe makes quite a few muffins so it’s a great option to make and share with others.
Sourdough Bran Muffins
The best moist bran muffins and a great sourdough discard recipe!
Ingredients
- 1 1/4 cups all-purpose flour
- 1 cup natural bran or bran flakes crushed
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter or coconut oil
- 3/4 cup brown sugar
- 1 large egg
- 1 cup sourdough discard
- 2 tbsp molasses
- 1 cup milk
- 3/4 cups raisins
- 1/2 cup chopped nuts optional
Instructions

Combine dry ingredients and stir to mix well.

Cream together butter, sugar and egg.

Add sourdough discard and molasses. Mix thoroughly.

Add dry ingredients alternately with the milk, stirring just enough to mix. Be sure to not over stir and your muffins will be tough.

Fold in your raisins and nuts.

Fill greased muffin tins 3/4 full.

Bake at 375 degrees F for 20-25 minutes or until the top springs back when lightly touched.
Recipe Notes
This recipe makes about 16-18 regular sized muffins.

How long will they keep?
These muffins will keep for several days at room temperature in an airtight container or wrapped. You will want to move them to the refrigerator after a couple days or if you live somewhere with high humidity to help them keep longer.
