Preheat oven to 350 degrees F. In a bowl combine crushed graham crackers, melted butter, and sugar. Mix until well combined. Spread and press down evenly in a 9 x 13 pan. Bake at 350 degrees for 8 - 10 minutes.
While that's baking, in a bowl combine sweetened condensed milk, lime juice, vanilla extract, sour cream, egg yolks, and lime zest. Mix until well combined. Pour over hot crust. Bake at 325 degrees for 18-20 minutes. Let cool.
While it's cooling, make the topping by adding heavy cream in a large mixing bowl. Mix until stiff peaks form. Add in powdered sugar and mix. Spread over cooled bars and top with lime zest!
