Key Lime Pie Bars (The Perfect Summer Treat!)

Ingredients

Crust:

  • 2 1/2 sleeves graham crackers crushed
  • 1 stick salted butter
  • sprinkle of sugar

Lime Pie:

  • 3 cans sweetened condensed milk
  • 1 cup key lime juice
  • 2 tsp vanilla extract
  • 1 cup sour cream
  • 2 egg yolks
  • 1 tbsp lime zest

Topping:

  • 1 1/2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tbsp lime zest

Instructions

  1. Preheat oven to 350 degrees F. In a bowl combine crushed graham crackers, melted butter, and sugar. Mix until well combined. Spread and press down evenly in a 9 x 13 pan. Bake at 350 degrees for 8 - 10 minutes.

  2. While that's baking, in a bowl combine sweetened condensed milk, lime juice, vanilla extract, sour cream, egg yolks, and lime zest. Mix until well combined. Pour over hot crust. Bake at 325 degrees for 18-20 minutes. Let cool.

  3. While it's cooling, make the topping by adding heavy cream in a large mixing bowl. Mix until stiff peaks form. Add in powdered sugar and mix. Spread over cooled bars and top with lime zest!
