Buckeye Cake from Scratch: The Ultimate Chocolate Peanut Butter Dessert

Ingredients

Cake:

  • 2 cups cake flour
  • 2 cups brown sugar
  • 2/3 cup cocoa powder
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 1 cup milk
  • 1 cup hot strong coffee
  • 1/2 cup oil
  • 2 eggs

Frosting:

  • 8 oz cream cheese softened
  • 1/2 cup peanut butter
  • 1 tsp vanilla
  • 2-3 tbsp milk
  • 3-4 cups powdered sugar

Instructions

For the Cake:

  1. Mix dry cake ingredients. Add milk, coffee, oil and eggs. Whisk until smooth.

  2. Pour into a greased 9 x 13 cake pan.

  3. Bake at 350 degrees F for 30 - 35 minutes. Cool

For the Frosting:

  1. Beat cream cheese and peanut butter until smooth.

  2. Add vanilla and one tablespoon milk. Mix in powdered sugar, one cup at a time.

  3. Add remaining milk as needed until fluffy. Spread on cooled cake.
