This recipe is quite magical as you melt butter in your baking dish, then had your batter, and your sugared berries on top without mixing. When it bakes something amazing happens as it makes a delicious cake with berries or fruit. Also, you get to use 2-3 cups or blueberries, or other berries or fruit of your choice.

Blueberry Cobbler
The best and most amazing homemade Blueberry Cobbler!
Ingredients
- 2 to 3 cups blueberries fresh or frozen
- 1 1/2 cups sugar, divided into 3/4 cup amounts
- 1 stick butter
- juice of one lemon
- 2 cups self-rising flour*
- 2 cups heavy whipping cream
Instructions

Mix the fruit, 3/4 cups of sugar, and lemon juice in a bowl and set aside. Be sure to stir this mixture well.

In a separate bowl, mix the flour and remaining sugar. Then stir in the heavy whipping cream. I often find that I need to add more cream or milk as this batter is too thick. You want this batter to be thick but pourable.

Melt your butter in your 9 x 13 casserole dish in the oven. Once melted, pour the batter over the melted butter and DO NOT STIR. Then pour the fruit mixture on top of the batter and DO NOT STIR after either step. You want these layers to remain separate and do not want them to mix.

Bake your cobber at 350 degrees for about 40-45 minutes until the cobbler rises to the top and is golden brown and firm to the touch.

Allow the cobbler to cool slightly before serving. The cobbler is best served warm with vanilla ice cream, whipped cream or just by itself. Any leftover cobber is stored in the refrigerator and individually warmed up prior to serving.
Recipe Notes
*To make self-rising flour, add 1 1/2 teaspoons baking powder and 1/4 teaspoon salt to 1 cup of all-purpose flour
*Use your favorite fruit (blueberries, blackberries, peaches or cherries). Fresh or frozen for this recipe.
How long does Blueberry Cobbler keep?
Refrigerate leftover cobbler after cooling. Reheat it slightly before serving with a scoop of vanilla ice cream or whipped cream. We have found this cobbler keeps well in the refrigerator for about a week, if it makes it that long without being devoured. This cobbler can also be frozen for longer storage.
