All about Monster Cookie Bars
This recipe does not call for flour at all but if you truly want a gluten-free dessert then be sure to use the gluten-free oats. These chewy peanut butter oatmeal chocolate chip bars are the perfect combination with the perfect ratio of peanut butter to chocolate.
The other great thing about a sheet pan recipe like this is you can make them when you feel lazy. On those days when you want to bake a delicious treat but can’t bring yourself to roll all those individual cookie dough balls, you can make these instead. This recipe makes a ton and truly will help you feed a crowd or a family for several days.
We’re always trying new cookie recipes and when we find one that is good, we feel that we must share. Sharing is caring and we feel that you can make the most delicious treats at home and for them to better and healthier than those you can buy in a store. Not to mention, that they are less expensive to make at home too.
Monster Cookie Bars
Monster Cookie Bars are loaded with oats, peanut butter, chocolate chips and m&m's! Plus, they have no flour in them and they bake in a cookie sheet so they're perfect for a crowd.
Ingredients
- 1/2 cup butter, softened 1 stick
- 1 cup brown sugar packed
- 1 cup granulated sugar
- 1 1/2 cups creamy peanut butter not all-natural
- 3 large eggs
- 1 tbsp vanilla
- 1 1/2 cups quick oats
- 3 cups old-fashioned oats
- 1 tsp baking soda
- 1 1/2 cups mini m&m's
- 1 cup mini chocolate chips
Instructions
-
Heat oven to 350 degrees. Prepare a cookie sheet by lining with parchment paper, silpat liner, or spraying with cooking spray.
-
In a large bowl or stand mixer, combine butter, brown sugar, granulated sugar, and peanut butter. Mix until fluffy and pale in color. About 1-2 minutes.
-
Add the eggs and vanilla. Mix together.
-
Add in the oats and baking soda. Mix until combined.
-
Add in the m&m's and mini chocolate chips (reserve some for the top of the bars if you desire). Stir together with a wooden spoon or spatula until combined.
-
Dump dough onto the cookie sheet and spread out. This will take several minutes, but it can be done. It helps if you dollop spoonfuls of the dough all over the cookie sheet (rather than one pile in the middle) and then spread it out. Sprinkle with reserved m&m's and chocolate chips (if desired). Press down slightly onto the dough.
-
Bake for 17-20 minutes. The edges will be lightly browned and the middle will still look pale and underdone, but it will finish baking as it cools. Let it cool for at least one hour so the bars can firm up and come together. You do not want to over-bake these!
Whipping up a batch of cookie dough isn’t hard and doesn’t take a lot of baking experience either. If you can follow the recipe, then you will come out with the same product you see pictured here. Be sure to give them recipe a try if you love all things chocolate and peanut butter, you won’t be disappointed.
How long will they keep?
Let’s be honest, these and most cookies taste the best the same day they are made. With that said, these bar cookies will last a couple of days in an airtight container at room temperature. After that, they’re texture might change and the cookies will become less soft.
