Brown Sugar Banana Bread

Ingredients

  • 4 ripe bananas
  • 1 1/4 cup brown sugar
  • 1/2 cup coconut oil
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 cup milk
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350 degrees. Grease a 9x5-inch or four mini loaf pans.

  2. Mash bananas. Add brown sugar and coconut oil and mix on medium speed until light and fluffy.

  3. Add egg, cinnamon, vanilla, and milk and mix until combined.

  4. Gradually mix in flour, baking soda, baking powder, and salt just until batter is smooth.

  5. Transfer batter to prepared loaf pan(s).

  6. Bake a large loaf for 50-60 minutes. Bake mini loafs for about 40 minutes. Check with toothpick and if it comes out clean they are done.

  7. Let bread cool slightly before serving.
