Quick and Easy Chicken Stock in 60 minutes
Add the chicken carcass and vegetable scraps to the Instant Pot.
Fill with water to the 2/3 full line.
Cook on manual pressure for 60 minutes.
Let it come down from pressure naturally.
Place a bowl or pot in the sink. Place a colander on top of the bowl or pot.
Pour all the contents of the Instant Pot into the colander so that all of the stock is collected in the bowl or pot.
Once completely cooled, transfer the chicken stock to jars or containers and place in the refrigerator until ready for use. Transfer to freezer safe containers or bags for longer term storage.
If you do not have an instant pot, you can make chicken stock in a crock pot. You add the same ingredients and cook on low for 8-10 hours.
