Butterscotch Chip Oatmeal Bars

Today we’re sharing a recipe for butterscotch chip oatmeal bars.  This is one of the best bar cookie recipes and the butterscotch chips just set it over the top.

If you’ve been looking for a good oatmeal bar recipe than you’ve come to the right place.  This is a tried and true recipe that can be made with any kind of chips.  We’ve made them with semi-sweet chocolate chips, milk chocolate chips, and even white chocolate chips.  You could even substitute raisins instead of chips if you were looking for a healthier option.

What makes Butterscotch Chip Oatmeal Bars so great?

These truly are an awesome recipe if you’re wanting something sweet but want a healthier choice.  While they can be eaten as a dessert, they can also be served for a snack or breakfast.  The even better thing is you can whip up a pan of these when you want to make cookies but don’t have the time or energy as they come together in little to no time. These are honestly our go-to recipe when we’re too lazy to make cookies but want a little treat.

Butterscotch Chip Oatmeal Bars

Ingredients

  • 1 cup butter (softened)
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tbsp milk
  • 1 1/2 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 4 1/2 cups quick cooking oats
  • 1 tsp baking soda
  • 1 cup butterscotch or chocolate chips

Instructions

  1. Cream together butter and sugar.

  2. Add eggs, milk and vanilla.

  3. Add the remaining ingredients. Mix just until combined.

  4. Press into a greased 9 x 13 baking dish.

  5. Bake at 375 degrees for 12 – 16 minutes.

These oatmeal bars store well at room temperature for several days or up to a week.  We store them in a baking dish and covered on the counter.  You can even heat them in the microwave for 10-15 seconds if you want one to be warm and gooey again.
