Chocolate Zucchini Bread

Can you believe it? A bread that is that is made with zucchini and chocolate! Yes two things you never thought would go together but they sure complement each other. And if you thought we were all out of zucchini recipes than you were wrong. We still have a couple more up our sleeves. We enjoy regular zucchini bread but this chocolate zucchini bread is an extra special treat. It has the same moist texture that zucchini bread always has but also has the chocolate flavor we all love. This is a great recipe but you can also add chocolate chips or chunks for an extra chocolate kick.

While we are nearing the end of our gardening season here in Oregon. We just harvested several very large zucchini squash. Initially we were overwhelmed yet grateful by this harvest, but then remembered this delicious chocolate bread recipe. This is a moist loaf of bread with a delectable crumb. This quick bread recipe is easy to make and also freezes well. You can make this bread up ahead of time and pull it out of the freezer whenever you need to or unexpectedly have company.

This chocolate bread is so delicious that you wouldn’t suspect anything healthy like zucchini being in this bread. Therefore, it is a great vehicle to sneak veggies into the diet of you or your family. It’s hard to imagine but this recipe uses 2 cups of shredded zucchini and even making two loaves, that means about a cup of zucchini per loaf. It is a great way to use up zucchini if you have an abundance of it. You can use fresh, frozen, or dehydrated zucchini to make this bread.

If you love quick breads and like having other options besides the old reliable banana bread, this chocolate zucchini bread is worth putting in your rotation. You can serve it for breakfast, as a snack or dessert. This bread can be served warm or cold. We prefer to eat it cold alongside an ice cold glass of milk.

Chocolate Zucchini Bread

2 cups sugar
1 cup canola, vegetable, or avocado oil
3 eggs
3 teaspoons vanilla
2 ½ cups all-purpose flour
½ cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon baking powder
2 cups shredded zucchini

Directions:

In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, combine the flour, cocoa, salt, baking soda, cinnamon, and baking powder. Gradually add the dry ingredient mixture to the wet ingredient mixture. Lastly, stir in the shredded zucchini.

Transfer to two loaf pans coated with cooking spray.

Bake at 350 degrees for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
